C SALT GOURMET
ThenMy childhood kitchen was a happy, bustling
place, where kids and grown-ups alike came together to cook our family meals—it was the beating heart of our
home.
It was with that understanding of food as a love language that I created my
Pistachio Cherry Chocolate with Sea Salt & Caramel to give as a Christmas
present
to my friends and family. The red of the cherries with the bright green
pistachios
looked so beautiful and festive with the deep, golden caramel drizzle, and I’d
always loved salty and sweet—chocolate covered pretzels were a childhood favorite of
mine. I sealed each box with the note ‘Hand-made with love by Courtney’ (and I still
do!) Everyone was smitten—including RJ McNerney, the owner of Promelis Market in Newport Beach, where a cousin of mine worked. At his invitation, I opened
for business and on Valentine’s Day of 2008 C Salt Gourmet was born (the name is a
little word play on my initials and my star ingredient).
Now
C
Salt Gourmet has evolved since then. The Pistachio Cherry Chocolate that
started it all has been awarded ‘Best Chocolate’ by The District and The OC Weekly.
Our close-knit family of products has grown to include a Pine Nut
Pistachio Brittle with Sea Salt & Vanilla as well as a wide array of intriguing truffle flavors. My professional
background in charity events has come in handy! Events have become a driving force in our
business—from catering decadent chocolate buffets and creating personalized favors for
weddings, showers,
and business gifts, to teaching truffle-making workshops and chocolate and wine
pairings.
It is my ever-growing commitment to serving my community, however, that I am
most proud of. As a strong believer in the slow food philosophy, I aim to
educate the public in reclaiming the joy and knowledge of how food is made and
where it comes from through my products, workshops and events. The organic, fair-tradeingredients C
Salt Gourmet uses are helping to build a new world where the earth and its inhabitants are
treated justly. C Salt Gourmet also donates to a wide variety of community causes, including
literacy, feeding the hungry, local theater and environmental education for youth. The
cherry on top of it all is getting to do what I love, everyday – create
delicious hand-made products that people love to eat.
